You know I love to feast on delicious food that is nourishing and easy to digest. It’s not fun to eat tiny portion sizes…and you don’t have to! There’s so many great options when it comes to eating and including all of the above factors. Start the New Year off with my Loaded Cheezy Baked Potato Recipe that will support you in feeling fantastic and beautiful.

Healthy Digestible Cheezy Sauce

Do you remember growing up on dishes like mac ‘n cheese, cheesy broccoli, and sour cream dolloped atop potatoes?! It’s possible to create similar tastes and textures from traditional recipes modified to be Beauty Detox friendly. This dish will bring back all the comforts from your original recipe—all with less fat, no dairy, and the bonus of easy digestion.

When it comes to making this dish vegan, you may think that cashews would be the product of choice. Prepare ingredients.

Preheat oven to 400 degrees F. Cut potatoes in half lengthwise and massage oil, salt, and pepper on both sides of potato. Bake for 30 minutes, or until tender.

Chop broccoli, cauliflower, and carrots and massage with oil, salt, and pepper. Bake for 20 minutes.

For cheezy drizzle, boil potatoes and carrots until tender (about 15 minutes), then drain and toss into a bowl.

Blend potatoes, carrots, nutritional yeast, olive oil, lemon juice, garlic powder, onion powder, cumin, coconut water, sea salt, and cracked pepper in high speed blender.

Place veggies on top of potatoes and drizzle with cheezy sauce topped with chives. Add more coconut water for desired consistency. Serve hot and enjoy!

  • 4 medium russet potatoes
  • 1 Tbs. coconut oil
  • 2 cups broccoli
  • 2 cups carrots sliced
  • 2 cups cauliflower florets
  • ¼ cup chives chopped
  • Sea salt to taste
  • Freshly ground black pepper to taste
  • Cheezy Drizzle Sauce
  • 1 cup potato peeled, cubed
  • ½ cup carrots chopped
  • 4 Tbs. nutritional yeast
  • 4 Tbs. coconut water
  • 1 Tbs. olive oil
  • 1 tsp lemon juice
  • 3 ⁄4 tsp garlic powder
  • 1 ⁄4 tsp onion powder
  • 1 ⁄4 tsp cumin
  • Sea salt to taste
  • Freshly ground black pepper to taste

Instructions
